During Thanksgiving week Chileno Bay guests will have the opportunity to enjoy a private dinner prepared by Chef Mads Refslund in their villas or experience one of his intimate outdoor group dinners on property. Bounty from the Sea of Cortez and produce from local organic farms will help Chef Refslund create a unique menu that reflects the flavors of Baja California.

An advocate for New Nordic cuisine and a terroir-based approach to cooking, Refslund built his reputation at Michelin-starred restaurants Formel B, Restaurationen, The Paul, and Kokkeriet in Copenhagen, before co-founding the four-time world’s best restaurant Noma with Rene Redzepi and Claus Meyer. Several experiences and packages with the Michelin-starred chef are available – here’s what to expect.
November 24 – 26: Have one of the world’s most acclaimed chefs prepare a privately curated villa dinner and savor wine pairings selected by Master Sommeliers, with a focus on the Baja Peninsula, also known as Mexico’s Napa Valley. From $5,000 for up to ten guests.
November 26: An extraordinary opportunity to have your very own private Michelin-starred chef when Refslund can prepare a Thanksgiving villa feast for up to 10 guests, including wine pairings. From $7,500.
November 28: Chef Refslund will cook over a live fire on the beach at Chileno Bay using his elemental cooking methods to transform local ingredients into a sublime multi-course dinner. Priced at $145+ per person, reservations required. A special Gather and Give Thanks package is available inclusive of daily breakfast, roundtrip airport transfers and reservations at Chef Refslund’s beach dinner is also available.

The oceanfront terrace at Esperanza’s Cocina del Mar will set the stage for Chef Refslund on November 27 as he transforms simple ingredients into visionary dishes in the outdoor exhibition kitchen. Priced at $145+ per person, reservations are required. Also available, a special Harvest of the Sea package that includes daily breakfast, roundtrip airport transfers, and a seat at the table at Refslund’s Cocina del Mar dinner.
